Available from 1 May to 30 June 2025, this limited-time culinary offering invites diners to embark on an intimate gastronomic journey inspired by the childhood memories of Chef Tommaso Gonfiantini.

A Taste of Chef Tommaso’s Past

The Famiglia Recipe menu features four thoughtfully crafted dishes, each reflecting a unique chapter of the chef’s early life:

Golden Crochetta

 

A crispy terrine of duck and chicken paired with a refreshing chervil-chive sauce. Inspired by young Tommaso’s first appreciation of crunchy textures, it recalls his early culinary adventures beyond his love for pasta.

Scallop Aglio Olio

   

Linguine tossed in white wine with asparagus and bottarga, reminiscent of summer holidays in Forte dei Marmi—where he first encountered the delicate taste of scallops.

Wagyu Peposo e Polenta

A 12-hour slow-cooked Wagyu shin shank infused with black pepper, served with Taleggio polenta. This dish brings to life his grandmother’s classic Sunday lunch staple, an irreplaceable family tradition.

Black Ink Risotto

Cuttlefish ink risotto with baby calamari, herbs, lemon, and crispy mushrooms. As a child, Chef Tommaso was mesmerized by the bold black hue—later discovering the depth of flavour hidden in the sea’s signature ingredient.
