How Rendang Republic Brought Indonesia’s Iconic Rendang to Chicago’s Culinary Spotlight

An Indonesian restaurant in Chicago has quickly made its mark on the city’s dining scene, earning eight prestigious awards and industry recognitions within its first year of operation.

Rendang Republic, which opened in April 2025, has introduced one of Indonesia’s most celebrated dishes to American diners through a modern menu that blends authentic flavours with familiar comfort food.

Located in Chicago, Rendang Republic places Indonesia’s iconic rendang at the heart of its menu. While the slow-cooked beef dish is traditionally served with rice, the restaurant has reimagined it in sandwiches and burgers, making it more accessible to local diners without compromising its distinctive taste.

According to the restaurant, its mission has always been to introduce rendang to a wider audience while preserving the essence of the traditional recipe.

“We wanted to elevate it (rendang) to a higher level, while maintaining all its tantalising flavours while making it something you can enjoy every day,” the restaurant said in a statement published on its official website.

The concept has clearly resonated with both food critics and customers. Between April 2025 and June 2026, Rendang Republic collected eight notable awards and recognitions, highlighting its growing reputation in one of America’s most competitive culinary cities.

Among its achievements are Chicago’s Best New Restaurants 2025 and The Best Lunches in Chicago 2025, both awarded by Infatuation.

The restaurant was also recognised in Chicago’s Best New Dishes of 2025, featured on Chicago Hit List Restaurants July 2025, and included in Chicago Hot List Restaurants Summer 2025 by Chicago Magazine.

In addition, Rendang Republic received the Best Global Cuisine 2026 award from Lakeview East, earned a place on Eater Chicago’s Best Dishes list in April 2025, and was named a finalist at the Jean Banchet Awards 2026, one of Chicago’s most respected annual culinary honours celebrating excellence across the city’s restaurant industry.

Sharing Indonesian Flavours with a Wider Audience

The restaurant’s success has extended beyond award ceremonies. Rendang Republic recently appeared on Radio WRLL Chicago, a Spanish-language station serving the city’s Latino community under Midway Broadcasting Corporation.

During the programme, Program Director Fernando Jaramillo interviewed Rendang Republic co-founder and chef John Avilla, alongside representatives from the Indonesian Consulate General in Chicago, including Indonesian Consul General Trisari Dyah Paramita and the Consul for Information, Social and Cultural Affairs.

According to an official statement, the discussion explored the inspiration behind the restaurant and its commitment to introducing Indonesian cuisine to American diners.

“In the interview, Chef John Avilla shared the philosophy behind the founding of Rendang Republic and the reasons for making rendang the main menu, his learning process for cooking rendang as a family recipe, and the various awards he has received,” the statement said.

Chef Avilla also spoke about balancing authenticity with accessibility, explaining the opportunities and challenges of introducing rendang to people unfamiliar with Indonesian cuisine while remaining faithful to its traditional character.

The Indonesian Consulate General believes the radio appearance helped broaden awareness of Indonesian food among Spanish-speaking audiences who have had relatively little exposure to the country’s culinary traditions.

“The coverage by WRLL Chicago, known as one of the Hispanic Independent Voices in the Chicago area, is considered effective in expanding the reach of Indonesian culinary promotion to new audience segments, namely the Latino and Spanish-speaking communities, which have relatively little exposure to Indonesian culinary promotions before,” the official statement noted.

The Consulate has continued to support Indonesian gastrodiplomacy through partnerships with restaurants such as Rendang Republic, alongside cultural events, exhibitions, and educational programmes aimed at introducing Indonesia’s rich culinary heritage to American audiences.

Rendang itself has long been recognised as one of Indonesia’s signature dishes. In 2011, it gained worldwide attention after being named the World’s Best Food by CNN Travel, cementing its reputation as one of the country’s most iconic culinary exports. Through restaurants like Rendang Republic, that recognition continues to grow, one plate at a time.
