Bali’s Best Menu Set: Culinary Odyssey at JW Marriott Jakarta’s Sailendra Restaurant

Social Expat was recently honoured to be invited to the launch of a week-long collaboration between JW Marriott Jakarta and Renaissance Hotel Uluwatu, promising an unforgettable culinary experience for those visiting Sailendra restaurant this week.

In partnership with Renaissance Bali Uluwatu Resort & Spa, JW Marriott Hotel Jakarta is bringing the authentic flavours of Bali to the heart of Jakarta. From August 21st to 25th, 2024, Sailendra Restaurant and Double Ikat Bali are hosting an exclusive dining event titled “Bali’s Best,” curated by none other than Renaissance Uluwatu Bali’s Executive Chef, Wisnu Adytama.

As part of the “Kitchen Takeover” series that began in July 2024, Sailendra Restaurant, renowned for its commitment to authentic and diverse cuisine, will be serving a selection of set menus and buffets for brunch and dinner.

An Exclusive Gastronomic Journey to Bali

The event commenced with a brief tour introducing the curated buffet selection, featuring signature dishes from Loka Rasa Nusantara (a celebration of Indonesian flavours) alongside international options like pasta, dim sum, and Indian cuisine. The highlights for us were the three distinctive Balinese sambals, the Balinese salad set, mie goreng (fried noodles), and rujak ikan (fish salad).


The highlight of the evening was the introduction of the exclusive set menu dine-in experience, meticulously crafted by Chef Wisnu Adytama.

An executive from Marriott Jakarta expressed their enthusiasm, stating, “We are thrilled to showcase the best culinary variations from each of our restaurants. Currently, our program aims to acquire cuisine from across the APAC region.” This collaboration is a testament to their dedication to cultural exchange and elevating the dining experience.

Meet the Culinary Maestro, Chef Wisnu Adytama

Chef Wisnu Adytama, Executive Chef di Renaissance Uluwatu became the guest chef for the Bali’s Best Menu Set Launching at Sailendra Restaurant on Tuesday, 20 August 2024.

Born and raised in Bali, Chef Wisnu is intimately familiar with the flavors and ingredients of his homeland. Growing up in a family with a passion for food, he was exposed to a wide array of ingredients from a young age. Chef Wisnu’s exploration of flavors has resulted in legendary dishes that now define Double Ikat, including Babi Guling (suckling pig) and Bebek Betutu (slow-cooked duck).

Renowned for his culinary expertise, Chef Wisnu’s signature cooking style beautifully combines modern and classic elements, earning him the title of Best Kitchen Manager in the 2018 FHT Salon Culinarie Challenge. Guided by the wisdom and traditions of his ancestors, Chef Wisnu masterfully transforms family recipes and cherished moments into delectable dishes that tell a story of generations past.

He believes that “Indonesian cuisine, with its complex flavours, thrives on fresh ingredients cultivated in the nation’s fertile soil. Every dish he prepares is ensured to use timeless recipes with a modern, contemporary approach that will be the star of your culinary experience.

Bamboo charcoal rempeyek churros, tuna loin, shallot, and chili salsa. A modern twist on the classic Indonesian raw tuna salad, with crispy churros adding texture and a smoky touch.

Smoked mushroom and coconut curd, roasted mushroom, mushroom chips, chili sauce. A vegetarian delight, showcasing the earthy flavors of mushrooms in various textures and a creamy coconut base.

Oxtail dumpling, root vegetables, oxtail consommé, chive oil. A comforting and flavorful oxtail soup, elevated with delicate dumplings and aromatic chive oil.

Sambal & palm sugar-glazed grilled Jimbaran Bay snapper, potato croquette with sambal matah and kemangi (lemon basil) salsa. A signature Balinese dish, featuring succulent grilled snapper with a sweet and spicy glaze, accompanied by flavorful sambal and fragrant herbs.

Braised short ribs, vegetable gulai (curry), corn texture. Tender, slow-cooked short ribs served with a rich and aromatic vegetable curry and a unique corn element.

Kefir lime-scented cream, tropical fruits, and vanilla gelato. A refreshing and vibrant dessert, showcasing the bounty of tropical fruits with a zesty kefir lime twist.

Additionally, a plate of Coffee macaron, salted caramel, and praline were served as sweet ending to the meal, featuring a delightful combination of textures and flavours.

Following the success of the Vietnam and Bali collaborations, Marriott Jakarta plans to invite other renowned chefs from JW Marriott properties worldwide. The next exciting collaboration is set to feature Phuket’s culinary scene.

The “Bali’s Best” set dinner was available for lunch, dinner, and weekend brunch from August 21st to 25th, 2024.
